I truly believe we should all have a list of meals we can make quick, cheap, and easily. I think of these as no recipe meals because you make them so often they don’t need a recipe!
Having a list of these on hand is great for those busy nights running to activities. It takes the stress out of cooking!

Chili: 1 pound ground beef, 1 can tomato soup, 1-2 cans diced tomatoes, 1 can kidney beans, 1 can corn or other veggies. Brown meat in stockpot, dump all the other cans in, add chili powder to taste. Freeze leftovers! Serve with cornbread!
Tacos: 1 pound ground beef, 1 packet taco seasoning, taco shells hard or soft, shredded cheese, salsa, and chips. Brown meat, add taco seasoning. Microwave soft taco shells with little bit of shredded cheese for 25 seconds. Add taco meat and fold up. Serve with chips and salsa, and sliced bell peppers. You can freeze leftover taco meat for next taco Tuesday as well!
Grilled Cheese: Use whatever bread and cheese you have! Just don’t forget to butter the pan sides of the bread very generously and cook on medium low. Adult yours up by making a turkey Swiss panini, or adding tomato and spinach to yours.
Air Fryer Fish: Use 4 frozen fish fillets of your choice. Partially defrost fish in fridge, place on air fryer sheet and butter the top generously or spray with oil. Then season accordingly. I like to use onion, garlic, lemon pepper, oregano, rosemary, and whatever else sounds good at the moment. I airfried it at 400 for about 15 minutes and it was perfectly flakey and delicious.
Crock Pot Creamy Italian Chicken: Slice two onions into rings and lay the unseparated rings on the bottom of your crock pot. Place 3-4 chicken breasts on top of onion and generously coat in 1 cup of low fat Italian dressing. Cook on low for about 3 hours or until done. Remove chicken breasts and add about 1 cup of low fat cream cheese to crock pot. Stir until well mixed, it will be a bit watery. Place some cooked spaghetti in a bowl, add chicken breast, and top with sauce.
Crock Pot Roast: Slice potatoes in half and place on bottom of crockpot. Add bag of baby carrots and 1 sliced onion. On top of this place about a 2 pound roast. I like a boston butt roast or picnic roast best. In a bowl add one packet ranch dressing mix, one packet beef gravy mix, and one packet Italian dressing mix to about 1/2 cup of water. Mix well and pour over roast. Cook on low for about 6-8 hours.
Spaghetti and Meatsauce: Cook noodles. Brown 1 pound ground beef in saucepan. Add jar of pasta sauce.
BYO sub sandwich night: I love this because its like subway but at home. I buy some big Kaiser rolls from the bakery, and then using all our different veggies sliced, meats, and cheeses I let the kids decide what sandwhich they want. Add some Doritos and a veggie tray and everyone is happy!
